Ingredients 12 kg mombar 12 kg of ground beef 2 cups rice 2 large onions، chopped 4 tomatoes 3 tbsp parsley، minced 3 tbsp dill، minced 12 tsp salt and pepper and spices 12 liters of water 2 Maggi Beef Bouillons
Directions Flip the mombar (sheep's intestine) using the back of a spoon، then remove fats as much as possible، and rinse well.
Put it in a colander and add some salt. Press lightly to get rid of the mucus.
Rinse well under running water، then wash it with flour and salt.
Repeat this process until you make sure it is fully cleaned، and then flip again using the spoon. Cut into pieces each of length 10 cm. Leave aside until you prepare the stuffing.
Wash rice well under running water، and then drain and leave aside.
Mix the onion with salt، pepper and all spices. Cut tomatoes into small cubes، and add it to the onions. Put dill and parsley، and then add ground meat and rice. Mix well.
Fill the mombar with the previous mixture. Tie one of the sides; add the stuff up to two thirds of each piece، then tie the other side.
Put the mombar in a deep saucepan. Add water and Maggi beef bouillon. Leave on medium heat until well done. You can add a little salt and pepper to taste. Drain well from stock. Leave aside.
Fry the mombar in ghee right before serving so as not to dry.
