Valentine’s Day 3 Course Meal

Recipes
BRUSCHETTA
2 medium beetroot
¼ small red onion
1 garlic clove
fresh rosemary
small handful fresh basil leaves
sea salt & black pepper (to taste)
1 tbsp. olive oil (more for drizzling over bread)

BUTTERNUT SQUASH RISOTTO، KING OYSTER SCALLOPS
300g risotto rice
6 garlic cloves
2 small shallots
1 tbsp. dried sage
1 tbsp. dried oregano
4 cups vegetables broth (make sure broth is kept warm)
1 medium butternut squash
300ml coconut milk
pinch chilli flakes
1 tbsp. garlic powder
2 tbsp. onion powder
sea salt & black pepper (to taste)
fresh sage leaves (to taste)

LEMON CHEESECAKE
Filling -
250g cashews (soaked)
½ cup agave or maple syrup
1 tbsp. vanilla extract
3 lemons
60g cacao butter (melted)
12 cup coconut oil (melted)

Cheesecake base-
1 cup desiccated coconut
8 pitted dates
1 cup ground almonds
½ lemon (juice)
pinch sea salt
