Rigatoni Pasta Cheese Bake With Beef

Ingredients
2 tablespoons olive oil
1 onion finely chopped
1 clove garlic crushed
1 lb mince (ground mincemincemeat)
1 teaspoon dried oregano 
2 tablespoons tomato puree
1 teaspoons sugar 
1 cup grated cheese (any hard cheese will do، try cheddar or parmesan cheese)
1 lb rigatoni pasta
1 small carrot sliced
6- 9 medium mushrooms sliced
1 tablespoon sunflower or vegetable oil to stir fry

For Sauce
2 tablespoons Butter
1 tablespoons all purpose (plain) flour 
1 ½ cups milk 
½ cup grated cheese 

Directions
Heat oil in a pan add onions، garlic، fry until onions softened، add the beef mince، salt، oregano cook until the mince is browned، stir in tomato puree، sugar، cover and simmer for 10 – 15 minutes. 
Add pasta in a large pan with water and salt، cook until still firm، drain
Melt butter in pan، add flour and mix until combined. On a low heat stir in milk، stir until the sauce thickens. Add grated cheese to sauce until smooth. 
Stir fry carrots and mushrooms separately.
In a baking dish spread half the pasta، spread out the mince mixture، lay carrots and mushrooms on to، and put another layer of pasta on to. Pour the sauce over and spread out. Sprinkle with grated cheese. Bake in oven at 375 F190CGas Mark 5 for 15- 20 minutes or until the cheese has melted and is golden brown.
