Ramadan is a particularly significant month for Muslims، where many take part in fasting from sunrise to sunset. This is one of the five pillars of Islam and is meant to bring you closer to Allah.
While not everyone fasts (pregnant women، children، the elderly and the sick are among those exempt)، most Muslims don’t let food or drink pass their lips during daylight hours.

Qamar Al-deen juice
Ingredients 1 package (400gm) of lamar Addeen or home made apricot leather. 3 cups tap water.* 13 cup sugar.**
Directions Cut the apricot leather into small pieces something like 2 inch squares. Put in a deep bowl and cover with water. Refrigerate overnight. In your blender blend the apricot with water and sugar until no lumps are visible. Strain if you like، I do not strain mine. Pour into a pitcher and refrigerate until serving time. Serve cold.***
Recipe Notes * If you are in a hurry and do not have time to soak it overnight. ** You can always add more if you wish to but I find this sweetness is the just right for us. *** If you wish you can dilute the juice in serving cups or add more sugar، just adjust to you level of likeness. I like serving it as is with some ice cubes، when the ice cubes melt it dilutes the juice by itself and I do not need any more cold water.
Stir Fried Vegetables
Ingredients 5-7 button mushrooms، halved 8-10 shimeji mushrooms 5-7 baby corn، diagonally sliced and blanched 4-5 dried chanterelle mushrooms، soaked ½ medium green capsicum، cut into triangles ½ medium yellow bell pepper، cut into triangles ½ medium red bell pepper، cut into triangles 6-8 broccoli florets، blanched 1 cup chopped bok choy 1 tablespoon oil 1 tablespoon chopped garlic Salt to taste Black pepper powder to taste 1 tablespoon soy sauce 2 spring onions with greens، diagonally sliced
Directions Heat oil in a non-stick pan. Add garlic and sauté till golden. Add button mushrooms and shimeji mushrooms and toss to mix. Add baby corn and chanterelle mushrooms and toss to mix. Add salt and pepper powder and mix well. Add capsicum، bell peppers، broccoli and bok choy and toss to mix. Add soy sauce and mix well. Add salt and pepper powder and mix again. Add spring onions and toss to mix on high heat for a minute. Serve hot.
Ingredients 1 kg beef 2 onions، chopped finely 1 teaspoon cinnamon 2 tablespoons flour 5-7 garlic cloves، crushed cooking oil salt and pepper
Directions Cut beef into bite-sized cubes. Mix flour، cinnamon and seasoning and roll meat in this mixture. Cook meat، onion، and pinch of salt over very slow flame. When the juice is re-absorbed، add garlic and cooking oil and fry lightly. Add water to barely cover and cook over low heat for one hour، adding more hot water، along the side of the pot، whenever the level of the juice is too low. Serve with the juice، which should be fairly concentrated.
Ingredients 2 pita breads 8 leaves romaine lettuce، torn into bite-size pieces 2 green onions، chopped1 cucumber، chopped 3 tomatoes، cut into wedges 14 cup chopped fresh parsley 1 clove garlic، peeled and chopped 2 tablespoons sumac powder 14 cup lemon juice 14 cup olive oil 1 teaspoon salt 14 teaspoon ground black pepper 14 cup chopped fresh mint leaves
Directions Preheat oven to 350 degrees F (175 degrees C). Toast pitas 5 to 10 minutes in the preheated oven، until crisp. Remove from heat، and break into bite size pieces. In a large bowl، toss together toasted pita pieces، romaine lettuce، green onions، cucumber، and tomatoes. In a small bowl، mix the parsley، garlic، sumac powder، lemon juice، olive oil، salt، pepper، and mint. Pour over the pita mixture، and toss just before serving.
Directions Preheat oven to 170°C150°C fan-forced. Combine 34 cup sugar and 1 cup cold water in a saucepan over low heat. Cook، stirring، for 5 minutes or until sugar has dissolved. Increase heat to high. Bring to the boil. Boil، without stirring، for 5 to 7 minutes or until golden. Remove from heat. Set aside for 2 minutes to allow bubbles to subside. Pour sugar mixture into six 1 cup-capacity، ovenproof dishes. Set aside to set. Combine cream، milk and vanilla in a saucepan over medium heat. Cook، stirring، for 6 to 8 minutes or until small bubbles form at edge of pan. Remove from heat. Whisk eggs and remaining sugar in a bowl until pale and creamy. Slowly add cream mixture، whisking constantly. Strain mixture into a jug. Divide between dishes. Place dishes in a large baking dish (see tip). Pour boiling water into baking dish until halfway up the sides of smaller dishes. Bake for 30 minutes or until just set. Remove baking dish from oven. Remove dishes from water. Set aside to cool. Refrigerate overnight. Run a thin knife around edge of each dish. Turn out onto 1cm-deep plates. Serve.
Ful Medames with eggs
Ingredients 4 eggs. 1 can black beans. 1 onion. 2 tablespoons butter،or margarine. 1 teaspoon cumin. Salt and pepper.
Directions In a skillet heat previously prepared fava beans and season with salt، pepper and cumin. Mash beans. Heat and stir margarine or butter and onion until yellow. Add beans and stir. In a bowl beat eggs then add beans mixture، mix well. Cook until the bottom of eggs is golden. Flip the eggs to cook the other side. Move to a serving platter and serve immediately.
Ingredients 6 large strawberries 1 teaspoon honey ¼ teaspoon vanilla extract ½ cup plain 2-percent-fat Greek yogurt 10 almonds، chopped
Directions In a bowl or jar، mash together strawberries، honey، and vanilla. Add yogurt and stir to combine. Serve chilled، topped with almonds.
Dates and milk
Ingredients Dates: 20 grams Milk: 200 ml + 300 ml (total ½ litre) Ice cubes (small): 8 to 10 Sugar: 50 grams Milk cream: ½ cup (standard cup) Small pieces of dates: for garnishing
Directions Soak dates in 200 ml of milk for 3 to 4 hours or overnight. Remove and discard the seeds. To a mixer، add these soaked and de-seeded dates along with the milk (used for soaking the dates). Add ice cubes، sugar، milk cream and 300 ml boiled and cooled milk. Close the lid and run the mixer for 30 seconds. Transfer this milkshake into serving glasses and garnish with small pieces of dates.
