Kapenta is one of Zambia’s traditional meals. There are various ways to prepare it، Today I will be showing you the most common way. A lot of Zambian families eat this، be it once in a long while، every week or once in a month or two.It is an integral part of Zambian Cusine. Ingredients 1 tomato 2 cups of dried Kapenta 12 a onion 3 cup of water
Directions Dice both tomatoes and Onions and set aside Place the kapenta on the stove and turn on medium heat Continuously mix the kapenta for roughly 10 mins – this removes the bitterness Remove the kapenta and place in a bowl of water(rinse the fish) Clean the pan and put it back on the stove Add 4 tablespoons of oil – let the oil heat Add kapenta to the pan، Let it brown Stir in onions، let them brown then add the tomatoes Continuously stir for 5 to 10 minutes And viola it’s done.
